Driving Miss Dairy: Caseus transports cheese to students

Ah, the days of the ice cream truck. When we were young, we measured our summer days by that playful melody rolling by our open windows. At the first musical note we immediately ran to our parents, begged for money, joined the throngs of children dashing outside, and chased after that colorful old van.

I guess it’s true, then, that we never grow up. At least not in New Haven. The Cupcake Truck has consistently blended the excitement of chasing trucks with the culinary pleasures of cupcakes for a few years, and now the Cheese Truck has joined the ranks of food-bearing vehicles. The Cheese Truck is a creation of Caseus (93 Whitney Ave.), a restaurant famous for its cheese plates. A mini-Caseus-on-wheels, the Cheese Truck offers a few of Caseus’s classic dishes, from the extravagant grilled cheese (it ain’t your mother’s grilled cheese) to the creamy tomato soup.

Caseus owner Jason Sobocinski told the Herald that the plan had been to start a mobile restaurant since the beginning. “This idea is about wanting to expand and about loving street food,” he explained.

Run by Jason’s brother, Tom Sobocinski, and Chef Jeff Weaver, the Cheese Truck has been making its way around New Haven. But there are challenges to a mobile restaurant operation. Since some of the food is prepared in Caseus proper and some in the truck, the timing can be tricky. The grill often gets backed up, and the wait for food can be long. “We care more about sending out a quality product, though,” Jason Sobocinski said.

The truck has made stops everywhere from downtown to the medical school to Cross Campus, and the response has been overwhelmingly positive. “We were out in the snow, and a lot of people came,” Jason Sobocinski said. “We’ve been selling out pretty much every time we’ve gone out.”

Following in the tire tracks of the Cupcake Truck, the Cheese Truck has given truck-chasing a modern twist: You can see online exactly where the truck is stopped, which means you no longer need to trace the Cheese Truck by smell alone. (Unlike the ice cream truck, the Cheese Truck does not have a theme song.)

The Caseus management promises that the Cheese Truck will now be a permanent addition to city life, rain or shine. We can’t wait to see what mobile food device you come up with next, New Haven.
